RESTAURANT SPOTLIGHT Shiro by TMonica Martarano James • photos by kari ruel ucked away on First Street in the Dwight Murray Plaza sits an undiscovered gem of Japanese and Korean specialties. Chef Paul Hiteo is eager to please the culinary crew of locals and tourists with his expertise. After years of training in Japan, Chef Paul moved to Beverly Hills to train with master chef Nobu Matsuhisa, and through his training proudly holds the designation of Tomo master Japanese sushi chef. Shiro’s menu is extensive, diverse and not limited to the printed menu. Those seeking an adventurous dining experience can ask for omakase. An omakase-style of dining allows the diner to experience the chef’s surprise dishes, using only the freshest ingredients. Omakase simply means “chef’s choice,” and the chef sends out dishes that are pleasing to the eye and the palate. The ship of sushi will take you on a journey through sashimi, sushi and rolls to please every palate. Even the skeptical “no raw fish” die-hards can indulge in the more modern rolls fried and fancily dressed for our American tastes. Some of the lunch options include a bento box (served with miso soup, rice and salad), and a variety of donburi and udon noodle dishes round out the Japanese offerings. Bo Paek, owner and operator, is proud to also offer a Korean element to their menu. An extensive array of side dishes, called banchan, and rice are served prior to traditional dishes such as bi bim bap, galbi and bulgogi. With so many choices, Shiro is sure to put a smile on the face of every diner. Shiro is located at 1106 First Street, on Dwight Murray Plaza, downtown Napa. Open Tuesday-Sunday, lunch 11:30 a.m. to 3 p.m., dinner 5 to 9 p.m. There is also a lounge adjacent to the dining room where beer, wine and soju sake are served.
