GOING Green Sustainability From vine to bottle, the making of Silverado Vineyards’ exquisite wine depends on the experienced hands of a strong community Good wine is about people, from every hand that helps create our Cabernet Sauvignon to every current and future friend who lifts a glass of our wine around the dinner table. We would not be Silverado Vineyards without a strong community, which is why the Miller family, who owns the winery, feels so strongly about being a good neighbor. Of course that starts with how we go about our daily tasks. Our entire estate is sustainably farmed: 15% is farmed organically; 70% is Certified Napa Green; 50% is preserved in the Land Trust exclusively for open space and agriculture use. Our solar panels power 40% of the winery. We are proud of these accomplishments, but they are just the beginning. We know we can and will do better. For us, sustainable is not simply a farming method, it is an approach to all of our activities. It is the driving force behind everything we do to ensure that this winery and estate are here for generations of our customers, neighbors and the Millers to enjoy. Owners Dario De Conti, Valentina Guolo- Migotto and Stefano Migotto are proud of this recognition as they understand the importance of sustainability. They are deeply committed to working with likeminded purveyors and business people in the community and have taken major steps to ensure their green status in the community. Ca’ Momi staff recycles everything they can and buys paper materials with recycled content. They also work to reduce chemical use by using only low toxic cleaning products that are Green Seal certified. When it comes to Italian cuisine, dining patrons are assured a truly authentic Italian experience. In fact, Ca’ Momi believes many of the ingredients are good enough to stand on their own true flavors and don’t need to be modified. They follow traditional Italian recipes, prepared with only the best organic and local ingredients – 90% of which come from their gardens located directly just outside the restaurant. Here they access arugula, herbs and seasonal vegetables to enhance their family-loved recipes used from centuries past. Although Ca’ Momi is proud to be recognized as a green business in Napa County, what excites them even more is being able to offer guests the magic of thousands of years of Italian food culture in each and every farm-fresh bite.
