SUMMERTIME
LEMON BARS
Finally, it’s summer time in the Bay Area! Summer for
me means bright refreshing flavors, and that’s exactly
what you get with this lemon bar recipe. These bars are
the perfect mix of tangy and sweet. The best thing about
these lemon bars (besides being delicious) is that they are
ridiculously quick and easy to make, which means more
time to enjoy our nice long summer days.
INGREDIENTS
CRUST
• 3/4 cup - butter, melted and slightly cooled
• 2/3 cup - powder sugar
• 1 1/2 cups - all purpose flour
• 1 teaspoon - vanilla extract
FILLING
• 3 eggs
• 1 1/2 cups - sugar
• 1/4 cup - fresh lemon juice
• 3 tablespoons - AP flour
• 1/4 tsp. - lemon extract (optional)
PREPARATION
Preheat the oven to 350 degrees. Grease an 11 X 7 glass pan.
Melt the butter in a small saucepan over medium heat.
Mix all crust ingredients and spread/push evenly into your
prepared pan. Bake the crust for 18-20 minutes until it just
starts to brown around the edges.
While the crust is baking, mix all filling ingredients
thoroughly.
Pour the filling over the crust (it’s ok if the crust is hot). Bake
bars for 22-28 minutes. The bars will form a crust in the
center and start to brown around the edges.
Let cool 30-45 minutes so the filling can set before you cut
and serve the bars. If you want to impress your guests, sift
powdered sugar over the bars and add garnish to make
them look fancy.
