days when parents
wracking their brains
for a healthy new kids’
snack inevitably came
up with a glob of peanut
butter smeared on a celery
stick. Today’s emphasis on
health and nutrition has
more and more people
examining food labels,
converging on Farmers'
Markets and devouring
food that grandma
wouldn’t think of serving.
As a result, options for
healthy children’s snacks
are only as limited as the
imagination.
Here are some quick
lunch and snack ideas from
the Stanford Children’s
Health Specialty Services
clinic in Sunnyvale, where
registered dieticians offer
specialized nutrition
services.
• For sides and snacks,
try berries, edamame,
string cheese, olives, snap
peas and applesauce.
• Leftovers like chicken
satay, quesadillas, lentil
salad and homemade
chicken nuggets make
good lunches.
• Make sandwich wraps
with flatbread, pita, a
tortilla or a bagel.
• Healthy fillings include
tuna, cut-up banana,
cream cheese, avocado,
salmon, pesto, cucumber
and cheese.
• Fix a non-sandwich
with black beans and
a little grated cheese,
extra-firm tofu, hard-boiled
egg, guacamole with
